“Imbue bittersweet vermouth” barrel-fininished Aria distiller’s reserve gin

Why put gin into bourbon barrels? We couldn't think of a reason either. So we didn’t. 

Gin and vermouth—now that makes sense. 

Neil Kopplin is Oregon’s first vermouth maker, and as it so happens, a good friend. So we called him. And as any good friend would do, when we asked him for a couple of his Imbue Vermouth barrels, he gave them to us. We rested Aria Portland Dry Gin for 12 weeks in Imbue Bittersweet Vermouth Barrels. We really just wanted to see what would happen, but he results were stunning.

With ten weeks of time in the barrel, we pulled out the flavors of the Imbue without letting the Aria Gin get overly oaky or woody. Restraint is the key here. This gin shows beautiful hints of the Patton Valley Vineyards wine that the vermouth was made from, as well as some sherry notes from the maderization process that the vermouth undergoes. There is a richness that pairs perfectly with the botanicals in the Aria, and at 97.5 proof this gin has presence.

Imbue has ceased production of the Bittersweet, so when this is gone, its gone forever.

“IMBUE petal & thorn rosé VERMOUTH” BARREL FININISHED ARIA DISTILLER’S RESERVE GIN

We were incredibly excited about how the first Imbue Barrel Finished Gin came out. So we called Neil again, and asked for more barrels. This time we rested Aria Portland Dry Gin for 12 weeks in Imbue Petal & Thorn Rosé Vermouth Barrels. The result was a very different gin, which we brought down to 82.5 proof. Then we threw in some organic rose petals and let them soaked for a few minutes. Really. The results are subtle yet stunning.

Petal & Thorn is our lightest and most delicate barrel finish. We call it the pretty one. The limited contact with rose petals adds delicate hint of the essence of Portland, the City of Roses.

“Ken Wright pinot noir” BARREL-FININISHED ARIA DISTILLER’S RESERVE GIN

We love Pinot—this is Oregon after all. Ken Wright is one of Oregon’s most respected producers and has been one of our personal favorites since we first fell in love with Pinot Noir. As luck would have it, Ken is a big fan of gin and happens to be an Aria drinker. So we talked him out of a barrel (which was thankfully not at all difficult). 

This gin spent twelve weeks in a barrel that has seen juice from all of the single vineyards Ken sources fruit from, over the course of 9 vintages. The gin that came out has a gorgeous character that perfectly captures Ken’s incredible wines. We brought this down to 92.5 proof where it is boldly aromatic and deeply flavorful with a richnes that lends an impossibly long and luscious finish. Our intention was to capture the essence of the Willamette Valley. We think we did it.

This first edition is extremely limited.
